There are two types of coffee-loving people: those who simply need caffeine to wake up and those who measure, grind, filter and agitate to get the perfect brew. If you fall in the latter camp, you’ll want to bypass Starbucks and head to one of the premier coffee roasters in the country, all which focus on quality, sustainability, education and, of course, taste.

With all the buzz about the environment and single-origin beans, diving into the world of speciality coffee can feel a bit overwhelming, thankfully we’ve rounded up the crème de la crème to get you on your way.

1Brooklyn Roasting Company, Brooklyn, NY

Found in the heart of Brooklyn's DUMBO neighbourhood and sharing its space with an offbeat bookstore Strand Books, Brooklyn Roasting Company is a haven for coffee enthusiasts and creative minds alike who admire its dedication to sustainability. Think Fair Trade, Rainforest Alliance and Organic certified beans roasted with care, brewers use a Loring Kestrel 1/2 bag roaster for small-batch perfection, producing standout varieties like the Peru High Grown Andes, a delightful cup with salted caramel notes that gets 10/10 from us.

2Blue Bottle, Oakland, CA

Inspired by Central Europe’s first-ever coffee house, founded by Franz George Kolshitsky in the 1600s, Blue Bottle Coffee had its roots planted in the early 2000s by James Freeman, a musician with a passion for top-notch coffee. His mission? To bring fresh, responsibly sourced beans to the people of Oakland, all delivered within 48 hours of roasting. Now with locations across California, New York and even Tokyo, Blue Bottle has built a reputation for its commitment to single-origin coffees, with new varieties making their debut three to five times a month. The best bit? Every batch undergoes a thorough “cupping” process to ensure it’s at its peak flavour before hitting the shelves.

3Breakaway Cafe (Formerly Flight Coffee Co) Dover, NH

A standout in New Hampshire’s coffee scene, Breakaway Cafe/Flight Coffee is all about connecting the dots between farmers, roasters and coffee lovers. At both its Bedford roasting lab and its Dover café, Flight celebrates the terroir of each origin, showcasing beans like the Colombia Armenia Excelso-Quindo with its bright black cherry and apple notes, while every batch is roasted with meticulous care, paying attention to sight, smell and even sound to ensure peak flavour.

What we really love about the company, however, is its commitment to community and education. Its tasting room isn’t just about enjoying a cup of coffee - it's an interactive experience where customers can dive deep into the nuances of specialty coffee, be that through tasting flights or learning about different processing methods, while all beans are ethically sourced too. It’s a win/win.

4Counter Culture, Durham, NC

Founded in 1995, Counter Culture is a powerhouse in the coffee world, boasting multiple World Brewers Cup wins and locations nationwide. Driven by a commitment to sustainability in all aspects of its business (environmentally, socially and financially), its dedication to perfecting coffee extends beyond their products to include the education of employees, partner and the public. Case in point? Initiatives like employee-supported agriculture (CSA) shares, their green fund and membership in the Durham Living Wage Project are just the tip of the iceberg.

Free on Fridays at 10am? Then head down to one of its training centres for “Tasting at Ten,” a free coffee tasting session which explores brewing methods and teaches about different coffee varieties. Don’t mind if we do.

5.Bird Rock Coffee Roasters, San Diego, CA

Bird Rock has been perfecting coffee since 2002, starting with a tiny home roaster at farmer’s markets. Now they’re a staple of the specialty coffee world, with award-winning coffees that often top Coffee Review’s charts. Their team, led by a Q-Grader-certified roaster, is all about quality -sourcing beans directly from farmers and respecting every step of the process. Beyond brewing up great lattes, they host seasonal pour-over bars, cuppings and even collaborate with projects like Project Waterfall. Our kind of people.

8.Intelligentsia, Chicago, IL

One of the best in the business for over 21 years, Intelligentsia, based in Chicago with locations in Los Angeles, New York, Atlanta and San Francisco, was founded back by Doug Zell and Emily Mange back in 1995 (they were ahead of the curve when freshly roasted coffee was hard to find). Today, they offer an impressive range of coffees including single-origin beans from family-owned farms and smallholder co-ops, blends and decaf (using a chemical-free mountain water process). We’re particularly fond of the Black Cat Project Espresso, which turns seasonal coffees into rich, bold espresso, while their In Season line highlights beans at their peak sweetness. Oh, and their Flecha Roja blend was even used in the 2016 Goose Island Bourbon County Proprietor’s Stout.

What’s more, with over 1,000 farm partners, you’ll drink only the freshest coffee, all served up in their stunning Williamsburg café where the roastery, sample room, and office space all come together under one stylish roof.
